Jamaican Sautéed Slaw with Bell Peppers and Thyme
Quick, easy, simple, with a bit of heat, this is a delicious and flavorful vegetable side scented with garlic and thyme.

Ingredients
- 1 teaspoon coconut oil or avocado oil
- 1 clove garlic minced
- 1/2 red bell pepper sliced
- 4 green onions sliced, white and greens separated
- 2 cups coleslaw or broccoli slaw mix
- 1/4 teaspoon thyme dried
- pinch cayenne pepper optional
- 1/4 cup chicken stock
- salt and pepper to taste
Instructions
- Heat a large pan over high heat and add the coconut oil. Add the garlic and bell pepper and cook until the bell pepper has softened, stirring often.
- Add the whites of the green onions and cook until soft, another 2 minutes.
- Add in the slaw mix and cook, stirring often until softened, about 5 minutes more.
- Add the thyme, cayenne, and chicken stock. Cook until little to no liquid remains and the vegetables are tender with a bit of crispness.
- Season to taste with salt and pepper, stir in half the green onion greens. Serve with remaining half of the green onion greens over top.
