Beef Fajitas
Seared beef with peppers and onions are richly seasoned with chili, cumin, and paprika. Serve with keto tortillas, guacamole, and fresh herbs.

Ingredients
- 1 1/2 pounds flank steak or top sirloin
- 1/8 teaspoon baking soda
- salt to taste
- 3/4 onion sliced into 1/2-inch strips
- 1 1/2 bell peppers sliced into 1/2-inch strips
- 2 cloves garlic minced
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 2 tablespoons gluten-free soy sauce or 3 tablespoons coconut aminos
- pinch of monk fruit to taste, omit if using coconut aminos
- 1 tablespoon lime juice 1 lime, juiced
Optional Toppings

- 8 keto "corn" tortillas
Instructions
- Dry the beef well and season to taste with salt. Sprinkle the baking evenly over the steak and rub to distribute it evenly.
- Preheat the ovenās broiler and oil a rimmed baking sheet with 1 tablespoon avocado oil.
- Place the steak onto the baking sheet, rubbing the second tablespoon of oil all over the surface. Broil on high for 8-10 minutes, for medium rare (125ĀŗF), or until cooked to your liking. Let the steak rest for 10 minutes before slicing. While the steak is cooking, prepare the vegetables.
- Heat a large pan over high heat and add a tablespoon of bacon grease or avocado oil. When the oil is hot, add the onion and peppers. Cook, stirring occasionally over high heat until charred in spots and the vegetables are softened, 5-10 minutes. Reduce the heat to medium and add the garlic. Cook until fragrant, about 1 minute more. Add the chili powder, cumin, paprika, soy sauce, and monk fruit. Cook until little to no liquid remains, another minute or so. Remove from heat.
- Slice the beef thinly across the grain and stir into the sautƩed peppers and onion. Add lime juice to taste and adjust salt, if desired.
- Serve atop tortillas with guacamole, sour cream, and cilantro, if desired.
Notes
Alternatively, you can sear the beef in a cast iron pan. To do so, heat a large cast iron pan over high heat. When hot, add a tablespoon of bacon grease or avocado oil. When the oil is hot, add the beef and sear until cooked to desired doneness. Let rest 10 minutes before slicing.
