Easy Sesame Chicken
This is an easy and delicious sweet and savory chicken dish that highlights the flavors of garlic and sesame. It takes a bit of time to cook but is almost entirely hands off, making for a perfect weeknight meal. I like to serve this over cauliflower or kelp noodle rice or along with a quick vegetable salad.

Ingredients
- 2 pounds chicken thighs boneless and skinless
- 3 cloves garlic minced
- 1/4 cup low sodium gluten-free soy sauce, or coconut aminos
- 1/4 cup chicken stock
- 2 tablespoons monk fruit powdered, or 3-6 drops stevia glycerite, omit if using coconut aminos
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha omit for nightshade-free
- 1 teaspoon fish sauce optional, adds umami but you won’t taste it
- 1/4 teaspoon glucommann powder optional, acts as a thickener
- 1/2 teaspoon toasted sesame oil
- 1 tablespoon toasted sesame seeds for garnish, optional
- 2 green onions sliced thin, optional for garnish
Instructions
- Combine all ingredients except the sesame oil, sesame seeds, and green onion in a pressure cooker. Cook on high (12 PSI) for 40 minutes with a natural steam release. (Alternatively, cook this in a slow cooker on high for 3-4 hours or low for 6-8 hours.)
- Remove the chicken to a plate and set aside. Using 2 forks, shred the chicken. Sprinkle the glucommann over the remaining liquid in the cooker and whisk to incorporate. Adjust the seasoning to taste with more salt and sweetener, if desired. Let stand 10 minutes for the glucomann to thicken fully and then add back the chicken and sesame oil, tossing to coat in the sauce. Sprinkle with sesame seeds and green onions and serve.
