Apple, Cinnamon, and Pecan Protein Bars

These protein balls are flavored with apple extract and then mixed with chopped pecans and cinnamon for a delicious protein bite. You can shape them into balls or else press them into a pan and cut into bars. Either way, they are great snacks for travel.

Instructions

  • Combine protein powder, collagen, almond flour, sweetener, cinnamon, and salt in a food processor. Pulse to combine evenly.
  • With the food processor running, stream the vinegar, color, and apple extract. Process until the batter comes looks crumbly. To test if it is ready, press some between your fingers. If it sticks together well, stop adding water. Otherwise, add more water or vinegar a couple teaspoons at a time until it does. Add the pecans and pulse to chop then use your hands to press all the batter into a large ball.
  • Roll into tablespoon size balls and store in the refrigerator. Or, press into an 8×8-inch pan lined with parchment or plastic wrap. Remove from pan and slice into bars.
  • Refrigerate or freeze for storage.
