Kachumber Salad

This Indian side salad is fast and easy yet full of flavor and a wonderful accompaniment to all proteins.

Ingredients

  • 2 tablespoons red onion chopped fine
  • 1/2 English cucumber chopped
  • 1/2 cup cherry tomatoes quartered
  • 1/2 jalapeƱo chopped (remove seeds for less heat)
  • 3 tablespoons cilantro chopped
  • 3 mint leaves minced
  • 1 teaspoon lime juice 1 lime
  • 1/4 teaspoon cumin
  • salt and pepper to taste
  • red chili pepper to taste, optional

Instructions

  • Combine all ingredients in a bowl and toss to combine. Season to taste with more salt, pepper, or vinegar as needed.
