Kachumber Salad
This Indian side salad is fast and easy yet full of flavor and a wonderful accompaniment to all proteins.

Ingredients
- 2 tablespoons red onion chopped fine
- 1/2 English cucumber chopped
- 1/2 cup cherry tomatoes quartered
- 1/2 jalapeƱo chopped (remove seeds for less heat)
- 3 tablespoons cilantro chopped
- 3 mint leaves minced
- 1 teaspoon lime juice 1 lime
- 1/4 teaspoon cumin
- salt and pepper to taste
- red chili pepper to taste, optional
Instructions
- Combine all ingredients in a bowl and toss to combine. Season to taste with more salt, pepper, or vinegar as needed.
