Beef Tibs

Spicy, herbal, and floral, with sweetness from caramelized onion and garlic, this Ethiopian beef dish is a delicious weeknight meal.

Ingredients

  • 1/2 yellow onion
  • 4 garlic cloves peeled
  • 2 inch piece ginger peeled
  • 2 tablespoons berbere spice blend use 1 tablespoon if you are sensitive to spice
  • 1/4 cup water
  • 1 teaspoon avocado oil
  • 1 pound sirloin steak tips or top sirloin, cut into 1 inch pieces
  • 2 tablespoons butter or butter flavored coconut oil for dairy-free
  • lemon juice to taste

Instructions

  • Add the onion, garlic, ginger, berbere, and water to a blender and process until smooth.
  • Melt the butter in a small pot over medium heat. Add the pureed onion mixture. Bring to a simmer and then reduce heat to low and cook, stirring occasionally until the mixture is a deep golden brown and paste like. Add more water as needed after cooking to produce a sauce consistency to your liking.
  • After about 20 minutes of the sauce cooking, prepare the beef. Season the beef cubes with salt, to taste. Heat a large pan over high heat. When hot, add the avocado oil. When the oil is hot, add the beef and cook until browned on all sides cooked to your liking, about 7 minutes for medium rare (125ºF internal temperature).
  • Add the sauce to the beef and stir to coat evenly. Season to taste with salt and lemon juice.
