Shrimp Larb

This is a bright and fresh Thai shrimp dish that requires no cooking and comes together quickly and easily. Pre-cooked shrimp is seasoned with a sweet, sour, and umami sauce then served on a bed of lettuce and fresh herbs to brighten it up. A few nuts add a nice textural contrast.

Ingredients

  • 1/4 teaspoon coriander ground
  • 1/2 tablespoon toasted sesame oil
  • 2 1/2 tablespoons fish sauce
  • 2 tablespoons fresh lime juice 1 limes
  • 2 garlic cloves minced
  • 1 1/2 tablespoons monk fruit golden, or 4 tablespoons coconut aminos
  • 1 shallot thinly sliced
  • 1 1/4 pounds pre-cooked shrimp cut into bite sized pieces
  • 1/2 red bell pepper diced small, omit for nightshade-free
  • 1/4 cup mint leaves coarsely chopped, plus whole leaves for garnish
  • 1/4 cup cilantro packed, chopped fresh
  • 1 head butter lettuce torn
  • 1/4 cup finely chopped salted macadamias or peanuts omit for nut-free
  • 1 jalapeño chili thinly sliced, optional, omit for nightshade-free

Instructions

  • In a large bowl, stir together the coriander, sesame oil, fish sauce, lime juice, garlic, sweetener, and shallot.
  • Add the minced shrimp and bell pepper and toss to combine, ensuring that everything is evenly coated. Taste and adjust seasonings as desired, adding more salt, sweetener, or lime juice, if needed.
  • Combine the chopped herbs and butter lettuce. Spread onto a plate. Top with the shrimp mixture and then garnish with the whole herbs, nuts, and chili, if using.
