Cucumber Slices with Creamy Garlic and Herbs

This herbed cream cheese spread is also great with keto bread, pork rinds, keto crackers, or Parmesan crisps. In a pinch, I will use garlic flavored Boursin cheese in place of the cheese and herbs below.

Ingredients

  • 8 ounces cream cheese or Kite Hill cream cheese if dairy-free
  • 4 ounces butter or butter flavor coconut oil, if dairy free
  • 1 clove garlic minced
  • 1 tablespoon Parmesan or nutritional yeast, if dairy-free
  • 1/2 teaspoon fresh basil or 1/4 teaspoon dried
  • 1/2 teaspoon fresh chives or 1/4 teaspoon dried
  • 1/8 teaspoon black pepper ground
  • 1/8 teaspoon dried thyme minced
  • 1 tablespoon parsley fresh, minced
  • 4 tablespoons heavy cream or coconut cream if dairy-free
  • 1 English cucumber unpeeled, sliced into 24 pieces

Instructions

  • Combine all ingredients except cucumber in a bowl and stir until smooth. Transfer to a piping bag with a decorative tip (or a ziplock bag, which you can cut the tip off of for piping).
  • Slice the cucumber into 24 pieces and pipe 1/2 tablespoon of the herb cheese topping onto each. Serve cold.

Notes

For an even faster version, use one block of garlic flavored Boursin cheese and mix with the heavy cream before piping onto cucumbers.
