Shrimp Bisque
This soup is mildly sweet thanks to leeks and shrimp as the base. A touch of tomato lends acidity and brightness while cream cheese lends a creamy texture and tang. Old Bay seasoning compliments the shrimp well for a subtle seafood soup.

Ingredients
- 4 tablespoons butter or butter flavored coconut oil for dairy-free
- 1 large leek chopped, white & light green parts
- 3 garlic cloves minced
- 1/4 cup brandy
- 1/4 cup dry sherry
- 3 ounces tomato paste
- 1/2 teaspoon Old Bay seasoning
- 4 cups seafood stock
- sour cream optional
- 1 pounds large shrimp peeled & deveined, shells removed
- 4 ounces cream cheese or Kite Hill cream cheese for dairy-free
- salt and pepper to taste
- parsley for garnish, optional
Instructions
- Melt the butter in a medium size pot over medium-high heat. Add the leeks and cook for 10 minutes, or until soft and translucent but not brown. Add the garlic and cook until fragrant, one minute more.
- Add the brandy and sherry and cook until the volume is reduced by half. Then stir in the tomato paste, old bay seasoning, and stock. Bring to a boil. Add the shrimp and turn off the heat. Let stand until shrimp are cooked through, about 5-10 minutes.
- If you want a completely smooth texture, transfer the entire soup to a blender and add the cream cheese (or use an immersion blender) and puree until evenly smooth. Otherwise, reserve half of the mixture, blend half until smooth then add the reserved soup and pulse to chop it slightly. Taste and adjust with salt and pepper, as desired. Garnish with sour cream, if using and fresh parsley.
Notes
Leeks tend to have a lot of grit in them, even when they appear clean. I like to chop them, place them in a strainer, and then rinse them very well before cooking. This helps get out all the little stuck pieces of sand/dirt.
