Fathead Pizza
This is a chewy and flaforful pizza base and the toppings can be varied to your preference.

Ingredients
Crust
- 1 3/4 cups shredded mozzarella
- 2 tablespoons cream cheese
- 1 egg
- 3/4 cup almond flour
- 1 1/2 teaspoons Italian seasoning
- 1/2 teaspoon garlic powder
- 1 teaspoon apple cider vinegar
Topping
- 1 1/4 cups mozzarella cheese
- 1/2 cup Rao’s Marinara
- 1/4 cup sliced pepperoni
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 425ºF.
- Add mozzarella and cream cheese to a microwave safe bowl and microwave on full power for 1 minute. Stir then continue to microwave for another 30 seconds to 1 minute, or until cheese is fully melted. Add in remaining crust ingredients and stir until evenly combined.
- Shape the dough into a ball and then press between two pieces of parchment paper. Use a rolling pin to roll the dough into a 12-inch pizza. Remove the top piece of parchment paper and transfer the dough onto a baking sheet. Bake for 10-15 minutes, or until golden on top. Flip the dough and bake on the under side until golden, a few minutes more.
- Remove pizza crust from the oven, spread the red sauce over top, sprinkle with cheese, and scatter pepperoni over top. Return to the oven and bake for 10-12 minutes, or until cheese is melted. Let cool for a few minutes before sprinkling with basil and serve.
