Chicken Salad with Creamy Jalapeño Sauce

Tender chicken tossed with a bright, peppery, and creamy jalapeño sauce and garnished with toasted pumpkin seeds and cilantro. I like to serve this on a bed of lettuce.

Ingredients

  • 1 batch creamy jalapeño sauce
  • 2 pounds cooked chicken cut into bite-size pieces (grilled, or even the homemade chipotle chicken recipe)
  • salt and pepper to taste
  • 1/2 cup toasted pepitas
  • cilantro for garnish

Instructions

  • Combine all ingredients and stir until evenly coated. Serve alone or on a bed of lettuce.
