Asian Chicken Sauté
Sweet and tangy, and full of Asian flavors, this is an easy and delicious keto meal. Inspired by Emily of Fuss Free Cooking. You could also skip the onions and bell pepper and make a marinade with all the sauce ingredients, omitting the broth. Coat the chicken and bake at 350ºF for 30 minutes.

Ingredients
- 4 tablespoons avocado oil divided
- 1 onion sliced thin
- 1 bell pepper sliced thin, omit for nightshade-free
- 2 pounds chicken thighs cut into bite size pieces
- 1/2 tablespoon ginger
- 4 garlic cloves minced
- 3 tablespoons monk fruit powdered, more or less to taste
- 1 tablespoon rice vinegar
- 2 tablespoons gluten-free soy sauce or 5 tablespoons coconut aminos
- 3 tablespoons tomato paste omit for nightshade-free
- 1 teaspoon sriracha omit for nightshade-free
- 1/4 cup chicken bone broth
- salt and pepper to taste
- 1 teaspoon sesame oil
- 2 green onions for garnish
- sesame seeds for garnish
Instructions
- Heat 2 tablespoons oil in a large pan over medium high heat. Add the onions and bell peppers along with a pinch of salt and cook until lightly browned, 5-10 minutes. Set aside and do not clean pan.
- Add remaining 2 tablespoons oil to the now empty pan over medium high heat. Add chicken and sauté until browned, about 5-10 minutes.
- While chicken browns, stir together monk fruit, vinegar, gluten free soy sauce, tomato paste, sriracha, and broth. Set aside
- Add the garlic and ginger to the chicken and cook until fragrant, another minute. Add the sauce mixture and cook until reduced by half, another 5-10 minutes.
- Off heat, add sesame oil, taste and adjust salt, sweetener, and vinegar to taste. Add back sautéed vegetables and garnish with green onions and sesame seeds, if using.
