Smoked Salmon and Herbed Cream Cheese Roll Ups

You can easily play with the flavor profile by varying the herbs used. Basil would also be a good option. These make excellent appetizers, snacks, and on-the-go meal options. Best of all, they require no cooking.

Ingredients

  • 8 ounces kite hill cream cheese softened at room temperature
  • zest of one lemon
  • 2 tablespoons dill fresh, minced
  • salt and pepper to taste
  • 1 pound smoked salmon
  • 1/2 cucumber sliced into matchsticks, optional

Instructions

  • Lay a large piece of plastic wrap or parchment paper on a counter.
  • Arrange the salmon slices so that their edges overlap to form a large rectangle with the longest side facing you.
  • Stir together the cream cheese, lemon zest, dill, salt, and pepper in a small bowl.
  • Carefully spread the cream cheese mixture evenly over the salmon, trying to keep the salmon pieces from moving too much. If using the cucumber, lay slices in an even row at the edge of the salmon/cream cheese rectangle closest to you about half an inch away from the bottom edge.
  • Using the plastic or parchment wrap, roll and push the salmon into a tight log. Wrap with plastic and transfer to the refrigerator to firm up, about 30 minutes.
  • Cut the roll into fourths (this is one serving), then cut these quarters into individual portions of desired thickness.
