Salmon, Avocado, and Cucumber Salad with Lemon Dressing

Bright, fresh, and fast. This is an easy, no-cook meal. Use any fresh herb you like. Tarragon or basil would also be good here.

Ingredients

  • 6 oz smoked salmon flaked
  • 1/2 avocado diced
  • 1/2 cucumber diced
  • 6 oz arugula
  • Dressing:
  • 1/2 tablespoon shallots finely minced
  • 2 teaspoons lemon juice 1 lemon
  • zest of 1 lemon
  • 1 tablespoon parsley finely minced
  • 4 tablespoons avocado oil
  • salt and pepper to taste

Instructions

  • Combine all dressing ingredients in a small bowl and stir to mix well. Pour over arugula, cucumber, avocado, and salmon in a large bowl and toss to combine.
