Tom Kha Gai (Thai Coconut Soup)

Tom Kha Gai is a Thai soup that is naturally keto friendly. The coconut milk base is balanced by acidity from the lime, heat from the peppers, and sweetness of monk fruit. Addition of either chicken or shrimp along with some kelp noodle rice make this a full meal.

Ingredients

  • 2 cups chicken stock
  • 2, 14 oz cans full-fat coconut milk
  • 1 stalk lemongrass
  • 6 slices galangal Fresh or dried – you can use ginger in a pinch but it is worth seeking out the galangal as it does taste different. You can find it dried in the spice section or on Amazon.
  • 6 Kaffir lime leaves lightly bruised and torn
  • 2 Thai bird’s eye chillies sliced large so you can easily avoid them (or other hot chillies)
  • 1 1/2 teaspoon salt
  • juice of one lime reserve the pressed halves
  • 4 tbsp granulated monk fruit
  • 4 tbsp cilantro
  • 12 baby shiitake stems removed
  • 1 boneless chicken breast pre-cooked and chopped (you can use shrimp for a variation)
  • 2, 7 oz packages miracle noodle rice optional

Instructions

  • Bring the stock to a boil in a large pot over medium high heat. While stock boils, prepare the lemongrass by bruising it with the backside of a knife and cutting it into large pieces. Add the bruised lemongrass, galangal, lime leaves, chilies, salt, and monk fruit to the pot and boil for 5-10 minutes.
  • Add coconut milk and shiitake and boil for another 5 minutes.
  • Add the chicken and heat until it is warmed through. Off heat, add the lime juice and pressed lime halves. Season to taste with more salt, monk fruit, and lime juice. Add cilantro and serve.
  • If you would like to add the miracle rice noodles to the soup, prepare the noodles by running them under hot water for several minutes. Then transfer them to a large sauté pan and cook over high heat until the moisture is evaporated. Thorough rinsing and cooking eliminates the fishy smell that often is present in the packaged kelp noodles. Add cooked noodles to the soup.

Notes

The nutrition information is without the kelp noodles. Add 1 gram carbohydrate if you choose to add them.
