Raspberry Clafoutis

This is a dense, eggy sweet custard with bright pops of fresh berries. Almond flavored whipped cream would be an excellent addition.

  • Preheat oven to 425ºF and grease 3 individual ramekins with butter.
  • Whisk together eggs and granulated monk fruit. Add cream, almond milk, salt, and vanilla. Add almond and lupin flours and mix until smooth.
  • Pour the custard mix into the prepared ramekins and arrange berries on top.
  • Bake until set, 15-20 minutes.
  • Cool 10 minutes and serve with whipped cream, if desired.

Notes

You can use coconut cream to replace the heavy cream and coconut oil to replace the butter to make this dairy free.
