Vanilla Snow

This frozen dessert is adapted from an Alice Waters recipe and it is lighter than ice cream and has a beautiful snow like texture, hence the name.

Ingredients

  • 2 egg whites
  • 7 Tablespoons granulated monk fruit
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup heavy cream
  • 1 cup milkadamia or almond or coconut beverage

Instructions

  • Beat the egg whites to soft peaks. Gradually add the monk fruit and salt and beat to stiff peaks. Add the vanilla, cream, and milkadamia and gently fold together. Freeze in an ice cream maker according to the directions.
