Roasted Squash and Tomatoes with Creamy Garlic Dressing

Quick and easy, these lightly charred summer staples make a beautiful side and are drizzled with a bright and flavorful creamy garlic sauce.

Ingredients

  • 1/2 cup cherry tomatoes omit for nightshade-free
  • 2 zucchini halved lengthwise and quartered
  • salt and pepper to taste
  • 1 tablespoon avocado oil
  • 1/4 batch Creamy Garlic Dressing

Instructions

  • Heat the oven’s broiler on high and line a rimmed baking sheet with foil. Set aside.
  • Toss the zucchini and tomatoes with avocado oil and broil on high for 15-20 minutes, cut side of the zucchini facing up until lightly charred all over.
  • Divide the roasted vegetables between serving dishes. Drizzle with the Creamy Garlic Dressing and serve.
