Pumpkin Spice Smoothie

This delicious fall-inspired smoothie tastes like pumpkin pie filling but is low fat and low in carbs for an easy no-cook breakfast treat that comes together in minutes.

Ingredients

  • 1 cup pumpkin puree about half a 15 ounce can
  • 3 cups low-fat cottage cheese
  • 1 cup non-fat Greek yogurt no sugar added
  • 1/2 cup almond milk beverage or coconut beverage, plus more as desired to thin the smoothie
  • 1 scoop protein powder sugar-free vanilla flavor, optional
  • 1/2-2/3 cup monk fruit golden, or stevia glycerite, to taste (start with 1/2 cup and add more, if desired)
  • 1/8 teaspoon salt
  • 2 teaspoons pumpkin pie spice

Instructions

  • Add the cottage cheese to a high power blender and process until smooth. Add the remaining ingredients and puree until smooth. Taste and adjust sweetener as needed.
