Pork Bulgogi with Asparagus

Sweet, spicy, earthy, this Korean-inspired pork dish comes together quickly and gets fresh crunch from sautéed asparagus. You can prepare the marinade a couple of days ahead, or even freeze the sliced marinated meat for easier prep.

Ingredients

  • 1 pound pork tenderloin
  • 2 tablespoons sambal oelek or 1 1/2 tablespoons gochujang
  • 2 tablespoons monk fruit golden, omit if using coconut aminos
  • 1 teaspoon ginger grated
  • 1 garlic clove minced
  • 2 tablespoons gluten-free soy sauce or coconut aminos
  • 1 1/2 teaspoons toasted sesame oil
  • 1/8 teaspoon baking soda helps to tenderize the pork
  • 1/2 tablespoon avocado oil divided
  • 1/2 pound asparagus trimmed and sliced into bite-size pieces
  • 1 green onion sliced, optional, for garnish

Instructions

  • Freeze the pork tenderloin until firm, about 30–45 minutes then slice as thin as possible.
  • Combine the sambal oelek, monk fruit, ginger, garlic, soy, toasted sesame oil, and baking soda in a bowl. Add the sliced pork and toss to coat evenly. Marinate at room temperature for 10 minutes, or refrigerate for up to two days ahead.
  • Heat a large non-stick pan over high heat. When hot, add half the oil. Add the asparagus and let cook on high heat without stirring for several minutes to char the asparagus in spots. Then toss and char without stirring again a couple more times, about 5-8 minutes in total. Transfer to a plate and do not clean the pan.
  • Add the remaining half of the oil to the pan. When the oil is hot, add the pork and cook until golden, about 1-2 minutes before flipping and cooking the second side until golden, another 1-2 minutes. Add back the asparagus and season to taste with a bit of salt and/or monk fruit, if desired.
