Poke with Creamy Sesame Sauce

Creamy, nutty, sweet, and savory salmon atop a salad full of vegetables and sweet mango makes for a quick, easy, and delicious no-cook meal.

Ingredients

Creamy Sesame Salmon

Salad

  • 4 cups salad greens
  • 1 carrot shredded
  • 1/2 English cucumber sliced
  • 1 Ataulfo mango diced
  • 2 green onions sliced
  • 1/2 cup edamame
  • furikake to taste

Instructions

  • Combine all sesame salmon dressing ingredients except the fish until smooth. Add the salmon and toss to coat. Set aside.
  • Add the salad ingredients to a large bowl or arrange on individual plates. Top with creamy salmon and sprinkle with furikake, if desired. Serve immediately.
