Matcha Basil Seed Pudding with Strawberry Jam and Kiwi Compote

Thai sweet basil seeds are neutral in flavor rehydrate and are similar in texture to chia seeds.

Ingredients

Pudding

Jam

  • 1/2 cup frozen strawberries
  • 1/8 teaspoon glucomann powder
  • pinch of salt
  • stevia glycerite or powdered monk fruit, to taste
  • lemon juice to taste optional
  • water as needed

Compote

  • 1 kiwi sliced or diced
  • monk fruit granulated, to taste
  • pinch of salt
  • squeeze of lemon optional

Instructions

  • Combine all ingredients and stir well to mix. Cover and refrigerate at least 30 minutes, and preferably overnight.
  • For the jam, combine berries and glucomann in a glass bowl and stir to distribute evenly. Cover the bowl with a plate and microwave for 3 minutes. After the 3 minutes, stir and microwave in 30 second bursts, stirring after each one until desired consistency is reached. Add water, as needed to thin the jam, if desired. Set aside.
  • Combine the compote ingredients in a small bowl. Adjust sweetener, salt, and lemon to taste.
  • Layer a quarter of the jam on the bottom of two serving dishes. Top each dish with half the matcha pudding, another quarter of the jam, and finally half of the compote.
