Combine all ingredients and stir well to mix. Cover and refrigerate at least 30 minutes, and preferably overnight.
For the jam, combine berries and glucomann in a glass bowl and stir to distribute evenly. Cover the bowl with a plate and microwave for 3 minutes. After the 3 minutes, stir and microwave in 30 second bursts, stirring after each one until desired consistency is reached. Add water, as needed to thin the jam, if desired. Set aside.
Combine the compote ingredients in a small bowl. Adjust sweetener, salt, and lemon to taste.
Layer a quarter of the jam on the bottom of two serving dishes. Top each dish with half the matcha pudding, another quarter of the jam, and finally half of the compote.
