Lemon Cream Dressing

This light and fresh dressing is barely adapted from Patricia Wells.

Ingredients

  • zest of 1 lemon grated
  • 2 tablespoons lemon juice freshly squeezed, 1 lemon
  • 1/2 teaspoon salt
  • 1 cup heavy cream or coconut cream, if dairy-free
  • 1/2 tablespoon Dijon mustard optional

Instructions

  • Combine all ingredients in a jar and shake to combine. Will keep for 1 week.

Notes

Makes 1 cup, serving size is 2 tablespoons.
