Preheat the oven to 375ºF.
Cut jalapeños in half, length-wise. With a spoon, remove the seeds and white membrane (the source of the heat).
Cook sausage in a frying pan until completely cooked, breaking it apart until browned. Drain the grease.
Combine the sausage, cream cheese, and cheddar, if using. Spoon the mixture into each jalapeño half and place on a parchment lined baking sheet.
Bake for 25-30 minutes, until lightly browned.
Notes
