Jalapeño Poppers

These are spicy flavor bombs! The added cheddar is optional. If you like more heat, leave in some of the membrane and seeds on the peppers.

Ingredients

  • 20 jalapeños 4 inch
  • 1, 8 ounce package of cream cheese softened at room temperature (use kite hill cream cheese if dairy-free)
  • 1 pound pork sausage casings removed
  • 1/2 pound sharp cheddar cheese finely grated, optional (leave off if dairy-free)

Instructions

  • Preheat the oven to 375ºF.
  • Cut jalapeños in half, length-wise. With a spoon, remove the seeds and white membrane (the source of the heat).
  • Cook sausage in a frying pan until completely cooked, breaking it apart until browned. Drain the grease.
  • Combine the sausage, cream cheese, and cheddar, if using. Spoon the mixture into each jalapeño half and place on a parchment lined baking sheet.
  • Bake for 25-30 minutes, until lightly browned.

Notes

The nutrition is for the jalapeños without the cheddar added. Serving size is 4 halves.
