Green Goddess Chopped Salad
Barely adapted from the popular salad by Melissa
here
. I like to serve this with a sprinkling of sunflower seeds on top as well.

Dressing

lemon juice
2 lemons (add apple cider vinegar to make up to 1/4 cup volume if you don't have enough)
zest of 2 lemons

avocado oil
use 2 tablespoons for lower fat

small shallot
peeled

cashews
or sunflower seeds for nut-free, or 1/2 medium zucchini for lower fat

Salad

small head green cabbage
finely chopped

English cucumber

Instructions
Combine all dressing ingredients in a blender and blend until completely smooth. Adjust seasoning to taste.
Place all salad ingredients in a big bowl and add the dressing. Toss to coat well.
