Green Goddess Chopped Salad

Barely adapted from the popular salad by Melissa here. I like to serve this with a sprinkling of sunflower seeds on top as well.

Ingredients

Dressing

  • 1/4 cup lemon juice 2 lemons (add apple cider vinegar to make up to 1/4 cup volume if you don't have enough)
  • zest of 2 lemons
  • 1/4 cup avocado oil use 2 tablespoons for lower fat
  • 2 cloves garlic peeled
  • 1 small shallot peeled
  • 1/4 cup cashews or sunflower seeds for nut-free, or 1/2 medium zucchini for lower fat
  • 1 cup basil leaves
  • 1 cup baby spinach
  • 1/3 cup nutritional yeast
  • 1 teaspoon salt
  • 2 drops stevia glycerite optional

Salad

  • 1 small head green cabbage finely chopped
  • 1 English cucumber finely chopped
  • 1 bunch chives finely chopped
  • 1 bunch green onion chopped

Instructions

  • Combine all dressing ingredients in a blender and blend until completely smooth. Adjust seasoning to taste.
  • Place all salad ingredients in a big bowl and add the dressing. Toss to coat well.
