Falafel Waffles

These light and tender waffles are flavored like falafel and topped with a tangy yogurt sauce, chili, and fresh herbs. Add a couple of poached or fried eggs to make a full meal.

Ingredients

Waffles

  • 3/4 cup almond flour
  • 1 tablespoon coconut flour
  • 1/2 cup cilantro or parsley and mint
  • 1/2 teaspoon coriander
  • 2 green onions ends trimmed
  • 1 garlic clove peeled
  • 1 teaspoon cumin
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 ounces cream cheese softened, or sour cream, or Kite Hill cream cheese for dairy-free
  • 3 eggs
  • 1/3 cup macadamia nuts finely chopped, optional, for texture
  • avocado oil spray for the waffle iron

Yogurt Sauce

  • 1 cup yogurt
  • 3 tablespoons olive oil
  • 1/4 cup mint finely chopped, or more to taste
  • salt and pepper to taste

To Serve

  • 8 eggs poached or fried
  • 1 cup cherry tomatoes halved
  • fresh mint leaves
  • aleppo pepper

Instructions

  • Combine all ingredients in a blender and process until completely smooth. Stir in the macadamias
  • Heat a waffle iron and spray it with avocado oil spray. Spoon the batter onto the iron and cook according to your waffle iron’s directions. Generally, 1/4 cup of batter onto the iron. Cook for 4 minutes, until crisp. Repeat with remaining batter.
  • Garnish waffles with yogurt sauce, tomatoes, chili flakes, and fresh herbs. Top with the eggs.
