Breakfast Burger with Guacamole, Salsa, and a Fried Egg

This breakfast comes together fast and is full of delicious Mexican flavors for an easy and satisfying meal.

Ingredients

  • avocado oil as needed
  • 1/2 pound breakfast sausage homemade, or store-bought bulk sausage meat
  • 4 tablespoons guacamole 1/2 batch homemade or store-bought
  • 2 tablespoons salsa homemade or store-bought
  • 2 eggs
  • cilantro for garnish, optional

Instructions

  • Heat a little bit of avocado oil in a cast iron pan or skillet. When hot, add the patties and cook over medium-high heat until the first side is browned and the patties are cooked about half way through, about 5-10 minutes. Then flip and brown the remaining side, cooking until cooked through, another 5-10 minutes. Transfer cooked sausage patties onto serving plates and do not clean pan.
  • In the now empty pan, add a touch of oil, if needed and fry two eggs over easy on medium high heat, or to desired doneness.
  • To serve, drape the eggs over tops of the sausage patties, spoon guacamole and salsa on top. Garnish with a bit of cilantro, if desired and season to taste with salt and pepper.
