Heat a little bit of avocado oil in a cast iron pan or skillet. When hot, add the patties and cook over medium-high heat until the first side is browned and the patties are cooked about half way through, about 5-10 minutes. Then flip and brown the remaining side, cooking until cooked through, another 5-10 minutes. Transfer cooked sausage patties onto serving plates and do not clean pan.
In the now empty pan, add a touch of oil, if needed and fry two eggs over easy on medium high heat, or to desired doneness.
To serve, drape the eggs over tops of the sausage patties, spoon guacamole and salsa on top. Garnish with a bit of cilantro, if desired and season to taste with salt and pepper.
