Balsamic Glazed Brussels Sprouts

These are fast, easy to make, and richly caramelized. Balsamic lends a bright acidity that pairs well with the sprouts natural sweetness. A few herbs lend freshness. Feel free to vary the herb to change the flavor profile. Basil, chives, or even tarragon would be excellent additions.

Ingredients

  • 1 tablespoon avocado oil or more as needed
  • 1 pound brussels sprouts small to medium size, ends trimmed, and cut in half
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons allulose 1 tablespoon monk fruit, powdered, or a drop or two of stevia glycerite, optional
  • salt and pepper to taste
  • parsley minced, optional

Instructions

  • Heat a large non-stick pan over medium high heat. When hot, add the avocado oil. When the oil is hot, add the Brussels sprouts, cut face down. Cook until browned, about 5-8 minutes.
  • Add a the balsamic and allulose and cover the pan to steam the sprouts until tender, another 3-5 minutes.
  • Uncover pan and cook until the water is evaporated off and the sprouts are as caramelized as you like, another 3-5 minutes.
  • Season to taste with salt and pepper. Sprinkle with parsley, if using.
