Camembert is similar to brie but with a slightly stronger flavor so feel free to use brie if you prefer it. However, the stronger flavor is nice to stand up to a bright sweet and tart jam topping (any berry would be good here). I like to serve this with parmesan crisps or homemade low carb crackers or crispbread. Served warm, the cheese become soft and scoopable, perfect for holiday platters.

Combine berries and glucomann in a glass bowl and stir to distribute evenly.
Cover the bowl with a plate and microwave for 3 minutes. After the 3 minutes, stir and microwave in 30 second bursts, stirring after each one until desired consistency is reached.
Stir in lemon and vanilla, if using and refrigerate or use warm. Will keep one week refrigerated.
For the Baked Cheese
Preheat oven to 350ºF.
Remove any plastic on the cheese and place the wheel back into the wooden box it comes in.
Score a cross through the top, cutting to the edges. Spread jam on top.
Bake in box for 15-20 min, no longer as the cheese begins to harden if baked beyond this point. Serve immediately with low carb crackers.
