This Scandinavian dessert is easy, dairy free, and low fat. It is traditionally made with lingonberry jam and eaten for New Year’s Eve in Norway. Cranberry is a good substitute for lingonberry but you can use any berry you like, such as blueberry here.

Combine everything in a mixer and beat on high speed until the mixture has quadrupled in size and is thick and holds its shape. Spoon or pipe into serving cups and refrigerate up to 12 hours (the mixture can break if stored for a long time so it is best eaten within a few hours).
