Tarragon Chicken Salad

Ingredients

  • 1 lb chicken breast cooked and diced
  • 1/2 cup mayonaise
  • 1/4 cup tarragon chopped fine
  • 1/4 cup parsley chopped fine
  • 2 stalks celery chopped
  • 2 scallions chopped fine
  • 1/4 white onion diced fine
  • Salt and pepper to taste

Instructions

  • Stir together the mayo, tarragon, parsley, celery, scallions, and onion. Add the diced chicken, stir well, and season to taste with salt and pepper.

Notes

Feel free to add some lemon juice and mustard for a bit of a flavor enhancement! Any fresh herbs will go nicely here.
