Strawberry Ice Cream with Passion Fruit and Freeze Dried Strawberries

The passion fruit is bright and tart, which goes well with the strawberry ice cream. The seeds of passion fruit and the freeze dried strawberries also has a nice crunchy texture to contrast the creaminess of dessert.

Ingredients

  • 2 servings of Strawberry Ice Cream frozen in silicon molds for quenelles (2 quenelles)
  • 1 passion fruit
  • 12 slices of freeze dried strawberries
  • edible flowers for garnish

Instructions

  • Invert a small bowl in the middle of a plate. Using half of the freeze dried strawberry slices, push them through a fine mesh sieve over the bowl to create a ring of fruit. Remove bowl to reveal decorative circle.
  • Place one quenelle in the center of each plate. Spoon half of the passion fruit seeds and juice over top.
  • Garnish with three slices of freeze dried strawberries and the edible flowers.
