This is an egg-free ice cream that is bright and tart. It makes excellent soft serve ice cream if consumed immediately. Otherwise freeze into popsicle or dessert molds.
Puree frozen strawberries in a food processor. Add cream, 10 drops (or 1/4 cup) sweetener, lemon juice, salt, and vanilla. Process again until well combined. Taste for sweetness and add more, if desired.
Spoon into popsicle molds and freeze or serve as soft serve ice cream.
