Steak Bites Sazon with Romesco Sauce

Sazon is a Spanish spice blend of coriander, garlic, cumin and annatto. It lends a rich and earthy flavor to seared steak tips that goes wonderfully with a peppery almond based sauce, romesco.

Ingredients

Steak Tips

  • 1/2 teaspoon coriander
  • 1/2 teaspoon cumin
  • 1/2 teaspoon annatto also called achiote, or use sweet paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon turmeric optional, earthy flavor and yellow color
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 pound sirloin steak flap meat cut into 2-inch pieces
  • 1 tablespoon avocado oil

Romesco Sauce

  • 1/4 cup roasted red bell peppers
  • 1 plum tomato
  • 1/4 cup almonds
  • 1 small garlic clove peeled
  • 1/2 tablespoon sherry vinegar or apple cider vinegar
  • 1 tablespoon avocado oil
  • 1/4 teaspoon paprika
  • pinch of cayenne optional
  • 1/8 teaspoon xanthan gum optional, prevents the sauce from releasing water

Instructions

  • Combine all steak tips ingredients except steak and oil. Stir to combine then add the beef, tossing to coat evenly. Set aside.
  • Heat a large pan over medium high heat and when hot, add the oil. When the oil is shimmering, add the steak and brown on all sides and cook to desired doneness, about 8 minutes total for medium-rare.
  • While the steak cooks, prepare the sauce. Blend together all sauce ingredients in a high speed blender until completely smooth. Adjust seasoning to taste with more salt, vinegar, and adding monk fruit or stevia if you want it sweeter.
