Sirloin Steak Tips with Horseradish Braised Radishes

Steak and horseradish is a classic flavor pairing. Boiling the radishes until tender and then tossing them in a delicious yet simple horseradish sauce keeps the fat low and flavor high!

Ingredients

  • 1 pound sirloin steak tips cut into 2-inch pieces
  • 2 teaspoons Worcestershire sauce make sure it's gluten-free
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper fresh ground
  • 1 teaspoon avocado oil
  • 1/2 cup chicken stock
  • 1/2 pound radishes halved (use white radish, if possible or else the braising liquid will turn pink)
  • 1 teaspoon gelatin
  • 1 tablespoon prepared horseradish
  • 1/4 cup parsley minced

Instructions

  • Add the steak tips, Worcestershire sauce, garlic powder, onion powder, salt, and pepper to a medium bowl and toss to coat evenly. Set aside and let marinate for 15 minutes at room temperature.
  • Combine the radishes, chicken stock, and gelatin in a medium pot. Bring to a simmer and cover. Reduce to a simmer and cook until the radishes are soft, about 10 minutes. Uncover and simmer until the broth is reduced to a couple tablespoons. Stir in horseradish. Season to taste with salt and pepper. Set aside.
  • Heat 1 teaspoon avocado oil in a hot pan over medium-high heat. Add the beef and cook until browned on all sides cooked to your liking, about 7 minutes for medium rare (125ºF).
  • Serve steak with horseradish radishes. Garnish the radish salad with parsley.
