Sheer Yakh (Afghan Cardamom and Rosewater Ice Cream)

This is a sweet and floral ice cream with an egg-free base that gets a slight chew from the inclusion of glucomann powder. You can omit either the cardamom or the rose to make it a single flavor, if you prefer. Because of the glucomann, you can actually use 3 cups of half n half as the total 3 cups liquid here rather than use the cream and water which will result in a lower fat ice cream that still has good texture. You can also use cashew or coconut in place of the dairy to make this dairy-free and/or nut-free as needed.

Ingredients

  • 1 teaspoon glucomann powder
  • 1/8 teaspoon xanthan gum optional, improves texture
  • 1/4 cup allulose
  • 1/2-3/4 teaspoon stevia glycerite or more to taste
  • 3 green cardamom pods crushed, or 3/4 teaspoon, ground
  • 1/4 teaspoon salt
  • 1 cup water
  • 1 cup half n half or cashew milk or coconut milk for dairy-free
  • 1 cup heavy cream or cashew cream or coconut cream for dairy-free
  • 1 teaspoon vanilla extract optional
  • 1/2 teaspoon rosewater optional
  • pink color natural, optional, omit if not using rosewater (I used 1 tablespoon Pink Pitaya Powder)
  • 1/4 cup finely chopped pistachios for garnish, optional, omit for nut-free

Instructions

  • Whisk together the glucommann, xanthan gum, allulose, cardamom, and salt in a small pot until evenly mixed.
  • Add the water, stevia, and half n half while whisking constantly and bring to a boil over medium heat, stirring occasionally. Boil for 10 minutes, or until thick and smooth.
  • Remove from heat and off heat, stir in cream and extracts, if using.
  • Chill completely and then pour into an ice cream maker and process according to manufacturer’s directions. Once churned, transfer to a freezer-safe container and freeze until set, about 3-4 hours.
  • Serve with a garnish of chopped pistachios, if desired.
