Shaved Cabbage with Hummus Dressing

Coleslaw gets a Middle Eastern twist in the form of a creamy dairy-free tahini dressing that tastes like hummus. A bit of green onion and some toasted sesame seeds for garnish make an easy yet beautiful and flavorful side.

Ingredients

  • 2 tablespoons tahini
  • 2 teaspoons lemon juice
  • 1 small clove garlic minced
  • pinch of cumin
  • water as needed
  • salt and pepper to taste
  • 1 cup cabbage thinly sliced (I like to use a mandolin but a sharp knife works well too.)
  • 1 green onion thinly sliced
  • toasted sesame seeds for garnish, optional

Instructions

  • Whisk together all ingredients except the cabbage in a large bowl until smooth. Add the cabbage and and toss to coat evenly. Garnish with green onion and sesame seeds, if using.
