Roast Fennel
This is easy to prepare but produces sweet caramelized fennel with a delicate anise flavor that makes for an excellent side dish for fish and meats. A bit of balsamic and some parmesan makes a nice variation.

2 fennel bulbs trimmed and cut into 1 inch thick slices, leafy fronds reserved 2 tablespoons avocado oil Salt and pepper to taste

Toss the fennel with the oil and salt and spread onto the prepared baking sheet. Bake for 40 minutes, or until tender and caramelized.
If you saved any of the tender leafy fronds, chop them and sprinkle over top just before serving.
