Roast Fennel

This is easy to prepare but produces sweet caramelized fennel with a delicate anise flavor that makes for an excellent side dish for fish and meats. A bit of balsamic and some parmesan makes a nice variation.

Ingredients

  • 2 fennel bulbs trimmed and cut into 1 inch thick slices, leafy fronds reserved
  • 2 tablespoons avocado oil
  • Salt and pepper to taste

Instructions

  • Toss the fennel with the oil and salt and spread onto the prepared baking sheet. Bake for 40 minutes, or until tender and caramelized.
  • If you saved any of the tender leafy fronds, chop them and sprinkle over top just before serving.
