Redwood White Chocolate Truffles

Redwood is refreshing, bright, and citrusy and reminiscent of the smell of a Christmas tree due to the pine like scent. Believe it or not, the best time to harvest the plant is spring, when the fresh bright green new tips are emerging. Spruce tips make an excellent version. I like to roll these in powdered monk fruit sweetener colored with various natural colors. Here, I have used blue spirulina for blue, pitaya and hibiscus for pink (which also adds a sweet tart flavor), dried passion fruit for yellow (a sweet tart flavor that pairs especially well with chocolate), and matcha and green spirulina for green (adds a bittersweet earthiness).

Ingredients

  • 7 ounces white chocolate, chips or bar chopped fine, 255g, such as Choczero or Lily’s, or 6 ounces unsweetened chocolate with 2 teaspoons stevia glycerite, or to taste
  • 1/2 cup heavy cream or coconut cream for dairy-free
  • 2 tablespoons butter or butter flavored coconut oil
  • pinch of salt
  • 1 cup redwood or spruce tips fresh or frozen
  • 3 tablespoons monk fruit powdered
  • natural food color powdered, optional

Instructions

  • Heat the cream until boiling either in the microwave or in a small pot and then add the redwood tips and crush them gently with a spatula. Set aside to infuse for at least 30 minutes and preferably refrigerate overnight.
  • Bring the infused cream to a simmer and strain. Add the butter and heat again until steaming. Pour over the chocolate and let sit for 5 minutes, until melted then stir until smooth.
  • Refrigerate at least 2 hours, until solid enough to scoop. Roll into 20 truffles and refrigerate until set hard, another hour.
  • Combine natural coloring and powdered monk fruit in a fine mesh strainer. Dust the rolled truffles with the mixture, turning to coat all sides. Keep refrigerated until serving.
