Pomegranate Spritzer

Bright and tart with a bit of sweetness, these beautiful pomegranate spritzers are a festive drink.

Ingredients

  • 1 tablespoon pomegranate juice plus a couple of arils for garnish
  • 1 tablespoon lime juice
  • 3/4 cup sparkling water
  • monk fruit liquid, to taste, or stevia glycerite
  • 2 drops orange bitters optional, or a drop of orange oil or extract
  • ice for serving
  • fresh rosemary for garnish, optional

Instructions

  • Combine the pomegranate juice, lime juice, orange bitters, and liquid monk fruit in a glass. Add ice and pour over sparkling water. Gently bruise the rosemary, if using and stir with the stem. Add the reserved pomegranate arils and serve.

Notes

You can easily make small amounts of pomegranate juice by placing some of the extracted arils in a fine mesh strainer and pressing on them with the back of a spoon. Do this in the sink as it tends to splatter and stain! Likewise, you can buy pre-seeded pomegranate or take out the seeds on your own. I like to use a large bowl and fill it with water. Cut the pomegranate in half and submerge in the water. Use your hands to break the fruit apart and extract the seeds. The mess is well contained under water. Then discard skin and membranes, reserving the loose seeds. They can be stored in the refrigerator for several days.
