Orange Sauce (Dairy-Free Chipotle Sauce)

This is a low carb recreation of the beloved Orange Sauce from La Victoria in the California Bay Area. Smoky, creamy, garlicky, tangy, with a touch of heat and sweetness, this Mexican-inspired dairy-free sauce is excellent on any protein or vegetable.

Ingredients

  • 20 garlic cloves peeled
  • 4 chipotle peppers in adobo rinsed of sauce
  • 2 tablespoons lime juice 1 lime
  • 1 tablespoon gluten-free soy sauce or 2 tablespoons coconut aminos
  • 1 teaspoon monk fruit powdered, omit if using coconut aminos
  • 1 tablespoon water more as needed
  • 1 teaspoon salt more as needed
  • 1/2 cup avocado oil
  • 1/8 teaspoon xanthan gum optional, helps stabilize the sauce

Instructions

  • Combine all ingredients in a high powered blender and process until completely smooth. Adjust seasoning to taste with salt, coconut aminos, and lime, as needed. This should form a thick emulsion. If the sauce breaks (the fat separates), chill the entire batch in the refrigerator until cooled. Add a bit more cold water and re-blend. This sauce will keep for one week refrigerated.
