Mexican Flavors Salad

This is such a refreshing salad. The lime is bright and cuts the strength of the garlic and augments the earthy flavors of the cumin in the simple dressing. Adding your protein of choice makes this a quick and easy meal. You can easily customize the ingredients to make it vegetarian and/or dairy free.

Ingredients

Dressing:

  • 6 tbsp avocado oil
  • 2 tbsp lime juice 1 lime
  • 1 tsp salt
  • 1/4 tsp monk fruit granulated
  • 1 tsp cumin
  • pinch cayenne
  • 1/2 tsp black pepper
  • 1 clove garlic minced

Salad:

  • 6 oz mixed greens about 2 large handfuls
  • 1/2 avocado diced
  • 4 radish sliced thin
  • 1 bell pepper sliced
  • 1/2 cup cherry tomatoes halved
  • 1 cup fresh cilantro chopped
  • 1/3 cup pepitas
  • 1/2 cup cotija cheese or queso fresco, crumbled
  • 1 lb shrimp pre-cooked

Instructions

  • Make the dressing by whisking all ingredients together in a small bowl. Set aside.
  • Combine all salad ingredients in a large bowl. Add the dressing and toss to coat evenly.

Notes

This salad is easily customizable! Swap shrimp for grilled chicken, beef, or even egg to make it vegetarian. Add other vegetables if you like such as sliced cucumbers or use roasted bell peppers. Even a small handful of fresh berries would go nicely here.
