Mediterranean Cucumber Salad

This is a nice side salad to any Mediterranean meal. Additionally, it can be tossed with salad greens and a protein to make it a meal in itself.

Ingredients

  • 1/2 pound English cucumber sliced, 1 cucumber
  • 2 tablespoons olive oil
  • 1/8 cup cider vinegar
  • 1/4 cup olives
  • 1 teaspoon basil dried
  • 1 teaspoon oregano dried
  • 1/4 red onion thinly sliced
  • 2 tablespoons capers

Instructions

  • Combine all ingredients and stir well.
