Lemon Posset

This dessert is so easy and requires only three ingredients. It is rich and yet the lemon flavor is refreshing.

Ingredients

  • 2 cups heavy cream
  • 2/3 cup granulated monk fruit 1/2 cup if you prefer less sweet
  • 1 tablespoon grated lemon zest 2 lemons
  • 6 tbsp lemon juice 2 lemons
  • ½ cup fresh berries

Instructions

  • Mix the cream, sweetener, and zest in a medium pot and bring it to a boil over medium high heat. Stir frequently and continue to cook for about 10 minutes until the cream is reduced and very slightly thickened.
  • Remove the pot from the heat and add the lemon juice. Stir well to combine then let the mixture sit for 20 minutes, uncovered.
  • Strain out the lemon zest and pour into individual serving dishes. Move these into the refrigerator and let set uncovered, at least two hours. These will keep several days, wrapped in plastic once thoroughly chilled. To serve, garnish with fresh berries.

Notes

Try adding various flavors to this dish such as a dash of vanilla. Herb infusions such as basil, mint, or rosemary. Floral additions such as lavender, elderflower, or earl grey would be fun as well. You can also vary the topping with something such as passionfruit or whipped cream and chopped nuts. Play with the citrus for further variation and use something like lime or grapefruit.
