Keto Rugbrød (Rye Bread)

Rye Bread is a Scandinavian classic. A bit sweet, malty, and studded with flax and sunflower seeds, this is a more dense and flavorful loaf of bread than the usual white variety. Use this to make an open face sandwich, known as Smørrebrød. Some ideas, including the ones photographed are listed below.

Ingredients

Instructions

  • Preheat the oven to 350°F.
  • Mix all of the dry ingredients together in a large bowl.
  • Boil the water.
  • Add the vinegar, malt flavor, rye flavor, molasses (if using) and the egg whites to the dry ingredients, and mix well. While mixing dough with a hand mixer, add the boiling water (should take about 30 seconds). Do not over mix the dough, the consistency will be similar to Play-Doh.
  • Moisten hands with a little avocado oil or water and transfer dough to a 9x5 loaf pan (greased if metal, uncreased if silicon).
  • Bake on in the oven for 1-1 1/2 hours. It should sound hollow when you tap on the bottom of the bread.
  • Allow the bread to cool completely (they will continue cooking a bit).

Some brands of psyllium will turn your baked good purple. This will not affect the flavor. NOW brand psyllium does not turn purple.

  • horseradish cream or aioli with cold shaved rare seared beef, red chili, nasturtium leaves, edible flower petals, and shaved radishes

  • chocolate hazelnut spread with raspberries
  • whipped ricotta or mascarpone and apricot with lavender, sugar-free honey and edible flower petals
