Dry Curried Pork with Green Beans

This is a quick and flavorful meal full of Thai seasonings. Store bought curry paste makes it a breeze. If you buy pre-sliced pork, be sure it is thin. Freeze whole pork shoulder for an hour or so to make slicing a whole piece easier.

  • Cut pork against the grain into thin bite sized pieces.
  • Heat a large pan over medium high heat and when hot, add oil and curry paste. Cook until fragrant, about 1-2 minutes. Add the pork, fish sauce, monk fruit, and broth. Cook, stirring over high heat until the pork is mostly cooked, about 5 minutes. While the pork cooks, par-cook the green beans by microwaving them for 2-4 minutes. Add the green beans and continue cooking another 5-10 minutes until almost all the liquid is evaporated and the beans are tender crisp. The curry is not supposed to have a lot of sauce.
