Cranberry Sauce

A bay leaf helps to lend an almost floral earthy note to this bright, sweet, and sour Thanksgiving classic.

Ingredients

  • 12 ounce bag of fresh or frozen cranberries
  • 1 cup water more as needed
  • 1 bay leaf
  • pinch of salt
  • 1 teaspoon stevia glycerite or more to taste
  • couple drops orange oil optional

Instructions

  • Combine all ingredients except orange oil in a small pot and bring to a boil. Reduce to a simmer and cook until the berries are burst, pressing berries with the back of a spoon if they have not burst on their own. Simmer for about 20 minutes, or until thickened. Add more water, to thin the sauce if you desire. Taste and adjust seasoning with more salt or stevia if needed. Add orange oil, if desired.

Makes 2 cups, serving size: 1/4 cup.
