This is a delicious and flavor packed low-fat frozen treat. Use your favorite coffee (I love a hazelnut flavor blend for this). The granita is great on its own but I do also like to serve with whipped cream or homemade sweetened condensed milk drizzled over top.
Prepare the coffee as you normally would. Stir in the allulose, vanilla, stevia, and salt. Pour into a 9x13-inch pan and set in the freezer for 1 hour. The mixture should begin forming ice crystals around the edge at this time. Use a for to break up the crystals before placing the pan back in the freezer to continue setting. Repeat every 30 minutes, or until completely frozen.
The granita can be covered and stored at this point. Best served the same day but will last up to a week, frozen. You may want to gently thaw for a few minutes if it is frozen overnight or more.
