Coconut Pineapple Popsicles

Sweet, creamy, tangy popsicles full of coconut and pineapple flavor are perfect for when the weather gets hot! Make as popsicles or even as a sorbet.

Ingredients

  • 2 cups pineapple frozen, cubed
  • 13.5 ounces light coconut milk or cream, if preferred
  • 1/3 cup allulose or 1/4 cup monk fruit, golden, or liquid, to taste
  • 1 teaspoon lime juice 1 lime
  • 1/4 teaspoon salt

Instructions

  • Combine all ingredients in a blender and process until completely smooth. Pour into popsicle molds and freeze until solid, a minimum of 4 hours.

Notes

You can also churn this in an ice cream maker according to your ice cream maker’s instructions. Serving size made this way is 1/2 cup and it makes 6 servings. Alternatively, you can pour everything into a rimmed baking sheet and scrape the surface of the mixture as it freezes every 15 minutes or so until frozen throughout for a granita type finish that does not require an ice cream maker.
