Cocoa Balsamic Vinaigrette

Earthy, sweet, tangy, and rich, this is a delicious and unique salad dressing. I like to serve this with mixed greens and sliced strawberries and toasted almonds.

Ingredients

  • 1/4 cup balsamic vinegar
  • 1/4 cup avocado oil
  • 2 teaspoons unsweetened cocoa powder
  • 1 teaspoon Dijon mustard optional, but helps to emulsify the dressing
  • 1 drop stevia glycerite or other sweetener, to taste
  • generous pinch salt
  • small pinch cayenne optional, omit for nightshade-free

Instructions

  • Combine all ingredients in a jar and shake well to blend completely. Dressing will keep for a week, refrigerated.
